Region and Farm Introduction: Popayán, located in the Cauca region of Colombia, is a well-known specialty coffee origin characterized by high elevations, volcanic soils, and stable Andean microclimates. These conditions produce coffees with balanced acidity, clean sweetness, and a smooth, approachable structure.

Coffee in this region is typically produced by smallholder farmers cultivating traditional Colombian varieties. Popayán coffees are widely valued for their consistency and versatility, making the region a strong source for both specialty and decaffeinated lots.

Processing Method Features: This coffee is first processed using the washed method, then decaffeinated using the Sugarcane Ethyl Acetate (EA) process, a natural decaffeination technique developed in Colombia. The method uses ethyl acetate derived from sugarcane fermentation to remove caffeine while preserving sweetness and aromatic compounds selectively.

Compared to conventional decaf methods, the Sugarcane EA process helps maintain more of the coffee’s body, clarity, and origin character.

In the cup, it presents a smooth and comforting profile with red apple sweetness, orange brightness, caramel depth, chocolate richness, and a nutty finish.
