Region and Farm Introduction: Shakiso is one of the most renowned coffee-growing districts in Guji, Ethiopia. Gigesa is a coffee-growing community within Shakiso where smallholder farmers cultivate traditional Ethiopian heirloom varieties. Carefully harvested cherries are processed at local washing stations, preserving the unique terroir and refined characteristics that have made Guji coffees highly sought after in the specialty market.
Processing Method Features: This coffee is processed using the washed method, where ripe cherries are depulped, fermented to remove mucilage, washed clean, and slowly dried on raised beds. This method highlights clarity, structure, and aromatic definition.
In the cup, bright bergamot and citrus notes are complemented by the honeyed sweetness of dried longan, layered with goji berry and prune-like fruit complexity. A refined Earl Grey tea character carries through the finish, creating an elegant, structured, and distinctly Ethiopian profile.
