About This Coffee:
Processing Method:
The coffee cherries undergo a dry anaerobic fermentation process for 72 hours. During this period, passion fruit pulp and yeast are added to enhance the fermentation. After this, the cherries are pulped and dried on raised beds, where the passion fruit pulp remains among the cherries until the ideal moisture content is achieved. This meticulous process ensures the development of the distinctive wine-like flavors in the coffee.
